What is MESA?
MESA—the Spanish word for “table”—was born from a simple yet profound idea: sharing a meal with strangers who soon become friends. Guided by Chef Kiki Alvarez’s creative vision, each meticulously crafted dish takes guests on a culinary odyssey, evoking heartfelt memories, emotions, and the rich flavors of her Venezuelan homeland, as well as the captivating spirit of Peru.
Who is Chef Kiki?
Born by Lake Maracaibo, Venezuela, her love for cooking began when she baked her first bread at 13.
Her journey took her from small cafés to co-owning a spot in Mérida, refining her craft in Dubai at a Latin American restaurant, and later transforming the kitchen at SEVA Table.

The Story
"Con Guaguancó" embodies rhythm, energy, and personal expression. In this edition of MESA, the menu highlights bold Caribbean flavors infused with the essence of Venezuelan cuisine and Kiki’s unique touch.
The dishes reinterpret traditional recipes by blending classic ingredients with modern influences. A key highlight is the reimagining of Pabellón Criollo, a well-known Venezuelan dish typically made with sweet plantains, black beans, and slow-braised beef. In this version, it takes on a new form as a taco filled with tender, seasoned pulled jackfruit, offering a plant-based take on a beloved staple.
Each dish reflects a balance of heritage and innovation, showcasing how traditional flavors can be adapted while maintaining their cultural significance. MESA: Con Guaguancó is an experience that combines authenticity with creativity, demonstrating that food, much like music, is an ever-evolving expression of identity and passion.
